Kaju katli is a popular dessert of india prepared with cashew powder and sugar syrup. typically kaju katli recipe is prepared during indian festivals like diwali, navaratri, raksha bandhan and even ganesh chaturthi. kaju katli is one of the popular indian dessert recipe. kaju burfi is made up of cashew nuts and sugar syrup which is than topped with cardamom powder and ghee. most commonly, kaju barfi’s are prepared during festival seasons of india like diwali, dusherra and also during raksha bandhan occasion. for health diet conscious people, kaju katli can also be prepared by crystalized sugar. i was always a big fan of kaju barfi recipe since my childhood days. i was always under the impression that, this burfi recipe is very difficult to prepare. however, my impression was totally changed by mom’s office colleague who gave me this recipe with few tips. i was so surprised and i wanted to prepare this immediately, but my husband gave me the idea of preparing it on the occasion of raksha bandhan. so here i am with this easy kaju katli recipe for this auspicious occasion of raksha bandhan. this recipe is dedicated to my brother and all the brothers by their loving sister. this indian sweet recipe is the most economical in terms of calories and complexity of preparation compared to other indian sweets. this barfi can be easily prepared in 15 minutes without much fuss and effort. moreover, this yummy sweet does not require ghee unlike other traditional indian sweet. in this recipe i have not used silver vark to garnish the barfi, but you can add it if you like so. adding silver vark would not enhance the taste but it looks very beautiful.

INSTRUCTIONS
firstly, in a small mixer jar, take 1 cup cashews. furthermore, grind to smooth powder. keep aside. now in a non stick pan, take ½ cup of sugar along with ¼ cup of water. keep the flame on low and keep on stirring to form syrup. stir the sugar syrup till it forms 1 string consistency. now sieve the ground cashew powder. remember to keep the flame on low all the time and give a good mix. add cardamom / saffron and continue to mix till it starts releasing from pan. once the cashew paste turns to dough leaving the pan add a tsp of ghee. continue to mix till the ghee melts completely and cashew dough is formed leaving the pan. switch off the stove. and grease the butter paper with ghee. transfer the cashew dough on to the butter paper. grease your hand with little ghee and knead 30 seconds. once you get smooth dough, cover with butter paper.
take a plate and press to form uniform layer. then roll the dough with a rolling-pin, adjusting the thickness according to your choice. cut the edges so that you can get perfect diamond shapes.
now cut the dough into diamond shape or the shape you wish for.
you can also decorate with silver leaf / silver vark. finally, serve kaju katli to your brother and celebrate raksha bandhan.
